Roots, Eats and Leaves

Root Vegetable Soup Chopped vegetables coated in oil and ready for roasting What else would you do on a cool May bank holiday weekend except make soup? This roasted root vegetable soup from Complete Comfort Food looked interesting. Lots of vegetables to be prepared: butternut squash, onions, leeks, turnip (swede), parsnip (yes, I hate them but surely one parsnip would be overwhelmed by the other ingredients) and carrots. Prep work done and bay leaves, rosemary and thyme interspersed, I popped the vegetables into the oven to roast. I had to leave the house for a few minutes and when I re-entered, the aroma of rosemary rose to greet me. Mmmm!  Roasted vegetable soup with creme fraiche and cayenne When softened, I simmered the vegetables in stock and then liquidised them. The soup was a little too thick. We ate it with a dollop of creme fraiche sprinkled with cayenne pepper. A little bland, I thought, but the spouse and younger offspring were very pleased.  Pea...

Cuban Black Bean Soup

Cuban Black Bean Soup Why on earth did I choose to make a Cuban soup on St Patrick's Day? I don't know. I think I just wanted to push on through the pulses section of The Soup Book , so I picked Carolyn Humphries ' recipe. Not willing to go to the effort of soaking and cooking dried black beans, I asked the spouse to find me a can of the chosen beans. You're supposed to cook the beans with a bay leaf, so I had to use the bay leaf after it was supposed to have been discarded. Another substitution was turmeric for the required annatto . The remaining ingredients and garnishes were easily available: a bay leaf, onion, garlic, cumin, ground cloves, tomato, white wine vinegar (a new bottle to replace the one with the 2008 expiry date!), ham, coriander leaves, corn tortilla chips and grated Cheddar. One listed item that I got out ready to use was brown sugar, but its use wasn't stated in the cooking instructions. The spouse and younger offspring were watching Ireland...

Minted Pea and Ham Soup

Minted Pea and Ham Soup I didn't get a chance to make soup at the weekend. Sometimes life gets too complicated to make soup. Not to worry. I made some this evening. Although the recipe is by Roopa Gulati , no spice was used in its making. The ingredients include shallots, butter, potato, stock, peas, mint and cooked ham. When I arrived home from a busy day out, I had a cup of tea then got stuck in to making the soup. We had ham stock in the freezer (I'd left some out to thaw before going out this morning), and the spouse had cooked a piece of ham yesterday so I diced up the leftovers. The chopped shallots were softened in the butter, then the chopped potato was thrown into the pan. When this was tender I poured in the stock. While the stock was simmering I cooked the peas, adding mint for the last twenty seconds. When ready I added them to the stock then whizzed the lot in the blender. I reheated the soup and stirred in the diced ham. The younger offspring and I ate the so...

Chestnuts ... But Not Roasting On An Open Fire

Piedmont Chestnut Soup The Christmas Song starts with the lyric "Chestnuts roasting on an open fire."  The first time I ever heard that song was at a studio recording of The Mike Yarwood Christmas Show in London many years ago (Mike Yarwood - where is he now?). When planning the Christmas menus with the spouse, I thought, "Mmmm, chestnuts." There are two recipes for chestnut soup in the  The Soup Book , the first of which was my choice for Christmas day. I started preparing it on Christmas eve, the spouse having had to go out to get another bag of chestnuts. The recipe for Piedmont chestnut soup is by Sophie Grigson, who warns that you need to allow time for peeling. I'd like to follow that up with a nail health warning: the nailbeds of my thumbs are very sore from peeling the chestnuts! I even put nail varnish on to hide the tear marks. Enough moaning - it's Christmas. The ingredients for the soup include chicken stock (home-made), thyme, bay leave...
