Another Baking Bonanza

My current project is to work my way through recipes from Norfolk’s Own Cookbook: Everything Stops for Tea , which was a present from J'Zo and G-Cro. J'Zo is delighted that I'm using the book and is even more delighted to be mentioned in my blog. She told me not to write that in my blog. Too late. Last Thursday (18th February) I made three things from Everything Stops for Tea : blondies, apple crumble cake and vintage Cheddar and walnut scones. The spouse, younger offspring and I were heading west to stay with family for a couple of days. I was pleased to have a good reason to progress my project. Everything was well received. One Week, Two Soups

Since my last blog entry I have made two soups from The Soup Book : smoked cauliflower cheese and black-eyed bean. The former was a mid-week dinner; the latter our weekend dinner.   Smoked Cauliflower Cheese Soup The spouse was going to make cauliflower cheese (love it) but I proposed Sophie Grigson 's recipe as an alternative. He screwed up his face and declined. Then he changed his mind. I thought mind-changing was my prerogative. Anyway, smoked cauliflower cheese soup calls for cauliflower, onion, a floury potato, garlic, a bouquet garni, butter, stock, smoked Cheddar and garnish. Sophie suggests cayenne pepper, chopped parsley or chives, croutons or soured cream to garnish.  I sweated the vegetables, garlic and bouquet garni with the butter before adding the stock. Cheddar and Chive Soup

Cheddar and Chive Soup The recipe for today's soup is by Carolyn Humphries , who suggests that you serve the soup with "plenty of warm, crusty bread." Cheddar and chive soup is the last of four from the cheese section of The Soup Book and calls for celeriac, onion, carrots, potato, vegetable or chicken stock, bay leaf, chive, milk, Cheddar soup, and creme fraiche. I have plenty of chives in my back garden: they seed themselves, seem to grow easily and I don't often use them. The flowers are quite pretty and are attractive to bees so I let them be.  The only ingredient I didn't have was celeriac so I had to pop down to Young Stephen's to buy one. Back at home I prepped the vegetables and got on with the first stage of the soup. This involved frying the root vegetables, adding the stock and bay leaf, simmering the mixture, and pureeing (yes, I had to get out the food processor).
